Carrots are a perfect snack or tasty side dish. They are full of nutrients and taste sweet and make a great addition to a healthy diet. These carrots are soft on the inside and crispy on the outside and can be baked longer or shorter depending on personal preferences.

  • 3 tbsp coconut oil

  1. Preheat oven to 350 degrees F.

  2. Cut carrots in quarters lengthwise.

  3. Make sure all carrots are about the same thickness so they cook evenly.

  4. Take a stainless steel baking sheet and coat it with the oil.

  5. Transfer carrots on the sheet pan in one layer.

  6. Put the baking dish with the carrots in the oven for 40 min.

  7. Once fully baked sprinkle with salt and pepper.


Depending on the thickness of the carrots it may take shorter or longer to bake the potatoes. Watch carrots while they are in the oven and take them out when they look good enough.
