1 cup walnuts

1 cup almonds

1 ½ cup shredded unsweetened coconut

2 cups soft medjool dates , pitted

2 tablespoons coconut oil

1 teaspoon vanilla extract

Directions:

In a large food processor fitted with an "S" blade, process the walnuts, almonds and 1 cup of shredded coconut until crumbly.

Add in the dates, coconut oil and vanilla and process again until a sticky, uniform batter is formed.

Scoop 1 tablespoon of dough on your hand and roll until a ball forms. Then roll on the rest of the shredded coconut and place on a baking sheet. Repeat until dough is gone.

Eat right away or put in the fridge for about an hour for the balls to harden.
Notes:
Other nuts can be substituted or mixed in with. The combinations are endless. Store in the fridge in an airtight container. It will stay good for several days.
