Directions:

Preheat the oven to 350°F.

Blend flax seeds and water until an egg like consistency occurs and set aside.

Mix almond milk and apple cider vinegar in a cup and set aside.

In a food processor add oatmeal, cinnamon, baking powder, baking soda and salt and mix until a flour like consistency occurs. Then put in a separate bowl and save for later.

In a food processor add 3 bananas (save 1 for later), dates, vanilla extract, almond milk with apple cider vinegar mixture and mix until well combined.

Now add the wet mixture to the dry mixture along with the flax seeds and water mixture and the chopped walnuts and stir until a nice batter forms.

Take a muffin pan with cup liners and distribute the batter evenly.

Now take the last banana, chop it up in chunks or slices and add to each muffin.

Place in the oven and bake for 15 minutes or until toothpick runs clean. Remove from oven and let it cool.

Notes:
Other non dairy milks can be used instead of almond milk. If walnuts are not available, they can be left out or other nuts can be added. Pecans would make a great substitute. Oat flour can also be used instead of old fashioned oatmeal and would make a great result also.
