It’s a vegan pesto that tastes incredible good with your favorite pasta! This pesto sauce is made out of cilantro and is rich in vitamin C, A and K.
1 - 1 1/2 cups
2 bunches cilantro, including stems
½ cup walnuts
¼ cup onion, yellow or white
¼ cup olive oil
1 tsp salt
Chop the onion into smaller pieces.
Add all ingredients in a food processor and mix until everything is well blended.
Add more olive oil as needed for different consistencies if desired.
Goes well with pasta. Simply cook your pasta according to package instructions, drain the water and then add as much pesto as you like. Give it a mix until all pasta is covered with the pesto. Make it a meal by serving it with raw cut up tomatoes, baked or fried tofu and sauteed mushrooms.
