Core the apple and chop it into small cubes (about the size of a raisin).
Add apple, oatmeal, water, vanilla, cinnamon and salt in a pot and bring to a boil. Then put a lid on and let it simmer on low for about 5 minutes.
Add the coconut milk (and raisins if you want to) and give it a stir. Close the lid and let simmer for another 5 minutes.

2 ½ cups
½ cup oatmeal
1 ½ cup water
½ cup coconut milk (canned)
⅛ tsp salt
½ tsp vanilla
¼ tsp cinnamon
3 tbsp raisins (optional)
Choosing your apples is important in this recipe. The sweeter your apples the sweeter your oatmeal will taste. It depends on your child's taste.
This oatmeal can be made ahead and reheated the next day and still taste very good. Simply add a little water in a pot and heat it up. Then add the cooked oatmeal mixture and give it a stir to incorporate the water and oatmeal completely. Add more water to get the consistency you or your child likes best.
