This soup contains lots of nutrients a child needs for a healthy development. It is iron rich, has lots of calcium, contains good fats, healthy proteins, lots of omega-3's and omega-6's and not to mention the other 21 vitamins and minerals.



  • 3 tbsp oil

  • 1/2 cup onion, white, finely diced

  • 2 cloves garlic, minced

  • 1 tsp salt

  • 2 cups water 

  • 1 cups potato, shredded

  • 3 cups zucchini, shredded

  • 1 can white beans, drained

  • 1 tbsp nutritional yeast

Zucchini Soup


  1. Heat oil in a pot. Once hot, add onions and saute for about 3 minutes or until lightly browned. 

  2. Add garlic and salt to it. Mix everything for about 1 minute. 

  3. Pour 1 cup of water and potatoes to the pot. Bring to a boil and simmer on low for 7 minutes. 

  4. Then add the zucchinis and simmer for another 3 minutes. 

  5. Blend together the vegetable soup with white beans and nutritional yeast until smooth. 

  6. Serve warm by itself or with croutons.
