This soup contains lots of nutrients a child needs for a healthy development. It is iron rich, has lots of calcium, contains good fats, healthy proteins, lots of omega-3's and omega-6's and not to mention the other 21 vitamins and minerals.
Ingredients:
3 tbsp oil
1/2 cup onion, white, finely diced
2 cloves garlic, minced
1 tsp salt
2 cups water
1 cups potato, shredded
3 cups zucchini, shredded
1 can white beans, drained
1 tbsp nutritional yeast

Directions:

Heat oil in a pot. Once hot, add onions and saute for about 3 minutes or until lightly browned.

Add garlic and salt to it. Mix everything for about 1 minute.

Pour 1 cup of water and potatoes to the pot. Bring to a boil and simmer on low for 7 minutes.

Then add the zucchinis and simmer for another 3 minutes.

Blend together the vegetable soup with white beans and nutritional yeast until smooth.

Serve warm by itself or with croutons.
