A very tasty vegan queso recipe full of nutrients and flavor. This vegan queso can be used as a dip, drizzled over veggies, eaten with chips or anywhere else you want. What makes this vegan queso so tasty and creamy are the potatoes as well as soaked cashews. For some cheesy flavor nutritional yeast and salt are added. It is the perfect vegan alternative to the real queso.
Ingredients:
½ cup cashews, roasted
½ cup water
¼ cup carrots, finely diced
¼ cup potatoes, finely diced
2 tbsp nutritional yeast
½ tsp salt
Directions:

Bring 2 cups of water to boil in a pot.

Remove pot from bruner, add cashews and cover with a lid. Let it sit for 10 minutes.

Steam carrots for 7 minutes.

Steam potatoes 10 minutes.

Once your cashews are done soaking, drain them and rinse under cold running water.

Add soaked cashews, potatoes, carrots, ½ cup of fresh water, olive oil, salt and nutritional yeast to a high speed blender. Blend until you have a smooth queso. (The more powerful the blender, the smoother your queso will be.)
Notes:
You can also soak your cashews for 4 hours in cold water instead of boiling water.
