Vegan Mushroom Gravy

This is an easy vegan mushroom gravy made from scratch. Perfect to pour over potatoes. Ideal for the holiday season or any other time you want. This mushroom gravy recipe is rich and creamy and loaded with flavors.
Ingredients:
2 tbsp olive oil
½ cup onion, finely diced
3 cloves garlic, minced
8 oz mushrooms, finely diced
1 ½ cup vegetable broth, divided
¼ tsp salt
1 ½ tbsp arrowroot starch
Directions:

Heat oil in a pan.

Once warm, add onions and saute for 5 - 8 minutes until lightly browned.

Add garlic and stir for about 30 - 60 seconds.

Add mushrooms and saute for a few minutes until mushrooms are cooked.

Pour 1 cup of the vegetable broth and bring to boil.

Add salt and arrowroot starch and whisk it with a fork until it’s well incorporated.

Turn off the heat, add the rest of the vegetable broth and give it a stir.
