This is an easy vegan lentil soup recipe with pantry staples most of you probably have at home. It’s perfect for the days you don’t feel like cooking but want something that's nutrient dense and requires minimal attention. This soup is a one pot dinner that the whole family can enjoy. Most kids love lentil soups especially if they have tomatoes. Tomatoes are the secret ingredients to lots of kid friendly soups. They are sweet and kids naturally tend towards those kinds of flavors. Serve this soup with potatoes or a whole grain toasted bread and salad and you got yourself a balanced and nourishing meal on the table!
Ingredients:
3 tbsp olive oil
1 cup onion, brown, finely diced
1 tbsp garlic, minced
1 tbsp paprika
1 tbsp chili powder
1 tbsp cumin
1 cup lentils, brown, dry
1 cup water
2 15-oz cans canned tomatoes
1 ½ tsp salt
Directions:
Heat olive oil in a pan.
Add onions and saute for 8-10 minutes until golden brown.
Put in garlic, paprika, chili powder and cumin. Saute for 1 minute.
Pour in lentils, water and canned tomatoes. Bring to a boil and simmer on low for 40 minutes or until lentils are soft.
Add salt once it's done cooking and stir.
Notes:
Serve with baked potato wedges or toasted bread.
