Vegan Alfredo Sauce

This is a vegan alfredo sauce mainly made out of almonds and potatoes. Use a high speed blender to really get a smooth creamy sauce that you can pour over vegetables or pasta. Use more or less vegetable broth to create the perfect consistency to your liking. Some people like it thicker other prefer thinner alfredo sauces. Either way it will taste very similar.
Ingredients:
⅓ cups potatoes
1 cup almonds
1 cup vegetable broth
2 tbsp oil
1 tbsp lemon
¼ cup nutritional yeast
½ tso salt
Directions:

First steam your potatoes until soft when poked with a fork.

Combine almonds enough water to cover them in a pot. Bring to a boil. Take off the heat, cover and let it sit for 10 minutes. Then drain the water.

Add the soaked almonds, cooked potatoes along with the rest of the ingredients in a blender and mix until you have a smooth sauce.
