Sauteed Spinach

This is a healthy sauteed spinach that tastes incredible good. Spinach naturally can taste bitter, so lots of people especially children don't like it. This recipe focuses on removing that bitter taste from the spinach while preserving most of its nutrients. This is the best sauteed spinach recipe that is easy to make, is vegan and tastes great.
Ingredients:

8 cups water

16 oz (453 g) spinach

3 tbsp olive oil

1 onion, medium, chopped finely

½ tsp salt

½ tsp paprika
-
¼ tsp cumin
-
2 cloves garlic, minced
-
2 tbsp lemon juice, freshly pressed

2 tbsp nutritional yeast
Directions:

Bring water to a boil. Add spinach. Time one minute after it has come back to a boil. Drain immediately all the water after one minute has passed. Set aside in a colander to strain off the liquid from the spinach. Once it's not hot anymore squeeze out any excess water.

Heat the oil in a pan. Once it’s hot, add the chopped onion to it. Sautee for 4 minutes.

Add the salt, paprika, cumin and garlic to it and stir for about one minute until the spices and onions seem well distributed.

Add the lemon juice, give it a stir and remove pan from the heat.

Add the wilted spinach to the onions and stir it around. Sprinkle with nutritional yeast and serve warm.
Notes:
This recipe tastes the best when it’s prepared freshly and eaten while still warm. Sauteed spinach does not store in the fridge well as it losses the good taste with time.
