Ingredients:
2 tbsp avocado oil
1 1/4 cup onion, finely diced
2 cloves garlic
1 1/2 c potatoes, finely diced
6 cups shredded cabbage (about ½ head)
4 cups water
1 tsp salt
1/2 cup coconut cream
Directions:

Heat olive oil in a pan on medium heat. Once heated, add onions and saute until lightly browned (6 - 8 minutes).

Add garlic and saute for about 30 seconds.

Put potatoes, cabbage and water in the pot and bring to a boil.

Cover with a tight lid, lower heat and simmer on low for 20 minutes.

Transfer all vegetables into a blender but reserve about 1 cup of soup liquid (for later) and blend until you have a thick well blended soup.

Put soup back into the pot, add coconut cream, salt, and reserved soup liquid and give it a stir.

Serve warm.
