Peanut Butter Tempeh

8 oz tempeh
Tempeh is full of essential nutrients. It’s the healthier alternative to tofu but has a different consistency and texture. Plain tempeh might not be very tasty but once you add flavor to it, it's delicious. This tempeh recipe is coated with a peanut butter glaze.
Ingredients:
8 oz tempeh
1 ½ tbsp olive oil
2 tbsp peanut butter
2 tbsp soy sauce
2 tbsp lemon juice
3 dates
Directions:

Preheat the oven to 350ºF (175ºC).

Slice tempeh into desired shapes and set aside.

Add olive oil, peanut butter, soy sauce, lemon juice and dates in a blender and mix until smooth.

Pour peanut butter glaze onto tempeh reserving about 1 tbsp to coat once its baked.

Line a baking sheet with parchment paper and add coated tempeh.

Bake for 25 minutes or until deep golden brown.

Remove from the oven and brush with leftover peanut butter glaze.

Serve warm.
