Orange Ginger Sweet Potato

Juicy and syrupy like sweet potatoes. Also known as Tzimmes. Traditionally cooked for passover. But it also makes a great dessert that you can eat by itself or over rice throughout the whole year. It also makes a great sweet side dish for a potluck kind of a dinner. Sweet potatoes are loaded with potassium and are a great addition to a healthy diet. Prunes are added to sweeten up the already sweet sweet potatoes. Prunes are known to support the digestive system. What can you want more from a dish!
Ingredients:
6 medium-sized sweet potatoes, peeled and cubed
3/4 cup prunes
1/4 orange, peeled
1 tbsp olive oil
1/2 tbsp ginger, fresh
1/2 tbsp orange zest, fresh
1/4 tsp cinnamon
1/4 tsp salt
Directions:
Preheat the oven to 425F. Lightly grease a ceramic baking dish.
Combine all ingredients except for the sweet potatoes in a blender and mix on high until well combined and a smoothie like consistency appears.
Combine the freshly made mixture with the cubed sweet potatoes in a mixing bowl and toss until everything is well coated.
Transfer to the baking pan and cover with aluminium foil. Bake for 30 min in 425F.
Remove foil and bake for another 10 minutes until sweet potatoes feel tender but are not burned.
