Jackfruit Pulled 'Pork"

We need more jackfruit recipes! So here is one. A vegan version of pulled pork. Jackfruit by itself can be tasteless so using the right combination of spices and other ingredients are essential to make it taste great. This pulled jackfruit is great for tacos, sandwiches or to stuff other vegetables with it.
Ingredients:
1 can (20 oz) jackfruit, in brine not syrup
1 cup water
1 tbsp olive oil
1 onion, finely chopped
2 cloves garlic, pressed
1 tsp paprika
½ tsp cumin
¼ tsp black pepper
1 tbsp soy sauce
Directions:
Put the jackfruit and water in a pot and bring to boil. Reduce heat and let it simmer for about 20 minutes or until the jackfruit is easy to pull apart.
Heat the oil in a pan over medium heat. Add the onions and saute for about 5 minutes or until translucent. Add the rest of the ingredients and saute for another minute. Set aside.
When the jackfruit is ready, drain from the water. Use a fork (and/or knife) to pull apart the jackfruit to make it look like pulled pork.
Add the onions to the jackfruit and mix until well combined.
Notes:
Use it to make pulled ‘pork’ sandwiches, stuff your mushrooms or other vegetables with it or use it in tacos. You can also add it to a chilli or other stews.
