Fruit Sweetened Granola

Serve a healthy granola for breakfast to your child without any added refined sugars. It�s fruit sweetened only. With the use of dates and raisins, this granola is perfectly sweet without any syrups or other refined sugars. This is a great breakfast to start the day but also makes an amazing snack or dessert if you put it on top of a yogurt parfait, smoothie or pudding.
Ingredients:
2/3 cup water, boiling
8 dates
3 cup oatmeal
1/2 cup almonds, coarsely chopped
1/2 cup walnuts, coarsely chopped
1/4 cup pumpkin seeds
1 tsp vanilla extract
1/2 tsp sea salt
1/2 cup raisins
Directions:
Preheat the oven to 275*F.
Put water and dates in a pot and bring to a boil. Once its boiling take it off the burner, cover with a lid. Let it sit for about 10 min.
Combine oats, nuts and seeds in a mixing bowl. Use a spatula or big spoon to mix it well.
In a food processor add vanilla, salt and the date-water-coconut oil mixture. Blend until smooth.
Add the date mixture into the bowl with the dry ingredients and mix until everything is well coated.
Spread raw granola in a thin layer on a baking sheet (see below in the section "Products to create this recipe" what baking sheet works best. You might need 2 of them and spread the granola on both sheets evenly.) and bake for 20-30 min. Keep watching it and take it out before it starts getting too dark and burnt looking.
Once fully baked, add raisins and mix well.
Cool completely before storing. It should be crispy and completely dry. Keep in an airtight container for best storing results.
