Creamy Tomato Sauce

A vegan pasta sauce mainly made out of sun dried tomatoes, coconut milk and nutritional yeast. The coconut milk turns it into a creamy tomato sauce, that can be stored in the fridge for several days or served immediately over pasta. A very easy vegan pasta sauce recipe that can be done within 5 minutes.
Ingredients:
1/3 cup sun-dried tomatoes in olive oil
1 can coconut milk (full fat, canned)
¼ cup nutritional yeast
½ tbsp apple cider vinegar
1 tsp salt
1 tsp italian seasoning
Directions:
Put all ingredients in a food processor or high speed blender and mix on high until a smooth and creamy sauce is made. It can take several minutes (5 or more) because the vinegar will make the sauce curdle at first. You just have to keep blending until the curdle is gone.
Heat the sauce slightly (don’t boil) and pour over favorite pasta.
Notes:
Add green peas and make a balanced meal out of it.
