Brown Rice Sushi

Sushi might sound overwhelming to do but once you try it, you will notice that it’s actually not that hard. Lots of recipes use sugar, this is a sugar free version as it turns out you don’t really need it in there.
Ingredients:

2 cups brown rice

4 cups water
-
6 tbsp rice vinegar

8 nori sheets

4 avocados
Directions:

Combine water and brown rice in a pot. Bring to a boil and lower heat to medium low. Simmer for 30 minutes or until water is absorbed.

Add vinegar to the pot and stir it around.

Put one nori sheet down and add ½ cup of cooked rice (still warm but not hot) on the lower half (closer to you) of the nori sheet.

Spread the rice evenly only on the bottom/lower half of the nori sheet.

Add sliced avocados on the rice on the lower end of the nori sheet and roll into a sushi roll.

Use your finger dipped in water to dampen the upper nori edge and seal the roll.

Put in the fridge and enjoy when rolls have completely cooled off.
