Vegan Wild Rice Pilaf

This rice pilaf is amazing. It’s a nutrient dense, healthy, vegan and balanced meal that can be eaten by itself or served on the side. Made with wild rice and brown rice.
Ingredients:

1 ½ cup brown rice, cooked

½ cup wild rice, cooked

¼ cup pine nuts
-
¼ cup almonds, slivered
-
¼ cup raisins
-
½ cup carrots, grated
-
2 cups mushrooms, diced
-
½ tsp salt
-
2 ½ tsp olive oil
Directions:

Cook your brown and wild rice according to packaging instructions.

Toast your pine nuts: Add pine nuts to a dry pan and put it on your stove. Turn heat on low and keep pine nuts moving to avoid burning. If pan is too hot to touch with your bare hands, it’s too hot for the nuts. Lower your temperature. Toast for few minutes until golden.

Heat 1 tsp of olive oil in a pan and add grated carrots. Saute for 3 minutes and set aside.

Heat another 1 tsp olive oil in pan and add mushrooms to it. Saute for 3 minutes and set aside.

Heat ½ tsp of olive oil in a pan and add slivered almonds to it. Toast them for few minutes until golden brown.

Now combine the cooked rice, pine nuts, almonds, raisins, carrots, mushrooms, salt and give it a stir. Serve warm.
